- It's 4 oz of shaved beef (C.A.B deli meat works well, i used left over prime rib).
- You need 1 oz of blue cheese spread.
- Prepare 1/2 of medium onion julienned.
- You need 1 Handful of spinach leaves.
- Prepare 1 of each 10 or 12 inch tortilla.
- Prepare of Blue cheese spread.
- Prepare 1 cup of sour cream.
- You need 1/2 cup of mayonnaise.
- You need 1 tbsp of worcestershire sauce.
- You need 1 cup of blue cheese crumbles.
- You need 1 tbsp of lemon juice.
- You need 1 of Salt and pepper to taste.

- In a bowl mix together all ingredients to make blue cheese spread.
- In a pan on medium heat add oil or butter. Add onions and saute until soft..
- Add your beef to the pan and saute for about 2 mins..
- Lay out your tortilla, add desired amount of blue cheese spread onto the tortilla. Then add spinach and your sauteed beef and onions. (The heat from the onions and beef will slightly wilt the spinach).
- Wrap up your tortilla by folding in the sides first then roll the other end over. Enjoy!.
