1. You need 120 g of cake butter, cold and in small chunks.
2. Prepare 2 tsp of sweet ground cinnamon.
3. You need 6 tbsp of cold whole milk.
4. You need 230 g of apples, cored and diced.

6. Prepare 1 of egg, beaten.
7. Prepare 120 g of dark brown sugar.
8. You need 2 tbsp of unrefined sugar.

1. Heat the oven to 180c. Then grease a spring form tin and line with greaseproof paper. It can just be greased but for ease of removing it I prefer to line it with greaseproof aswell..
2. In a large bowl whisk the flour and cinnamon together. Add the butter and rub with your fingers till its all crumbled. Stir the brown sugar in and then beat in the egg and lastly the milk..
3. Mix in the apples and raisins till combined..
4. Using a spatula transfer the batter to the tin and level the batter out..
5. Sprinkle over the sugar and transfer the tin to the oven. Bake for 30 minutes or until cooked through. Test by poking a skewer into the batter, if the skewer comes out clean, the cake is Cooked..
