Gather all the ingredients.
Roll out the pastry and cut in half. Lightly score about 1cm from the edge..
Simmer the pasatta until it has reduced to half the volume - this takes about 10-15 minutes. Add the Italian herbs and pepper..

Cover the pastry with pasatta, keeping the 1cm margin free..
Grate the mozzarella onto the pizza bases..
