Ingredients of Potato Bhajis

1. Prepare 3/4 cup of plain flour or spelt flour.
2. It's 1/2 cup of millet flour (juwar) can omit.
3. You need 3/4 cup of chick pea flour.
4. It's 2 teaspoon of coarse black pepper.
5. Prepare 1 teaspoon of sea salt.
6. Prepare 1 teaspoon of turmeric.
7. You need 1/2 teaspoon of red chilli powder or to taste.
8. It's 1.5 teaspoon of coriander, crushed.
9. Prepare 1 teaspoon of cumin seeds.
10. It's 1 teaspoon of ajwain seeds.
11. You need 1/2 teaspoon of cumin powder.
12. Prepare 1 teaspoon of lemon juice.
13. Prepare 2 teaspoon of ginger, minced.
14. It's 4 of green chillis, minced.
15. You need Handful of coriander, chopped.
16. You need of Rapeseed oil to fry.
17. It's 1/2 teaspoon of bicarbonate soda.
18. You need of Thinly sliced potatoes or vegetables of choice.

Potato Bhajis instructions

1. Mix all the ingredients together with cold water into a smooth batter.
2. Heat the oil.
3. Once hot, add 2 teaspoons of the oil to the batter and mix in the bicarbonate of soda until a froth forms on top.
4. Dip each slice of potato into the batter and carefully lower into the oil turning frequently ensuring the potato cooks thoroughly on a medium heat.
5. Serve with a coriander dip, as per previous post. Add Greek yogurt, a little cumin powder and salt to taste and stir into a dip texture.
